Abstract: This article investigates the process of regional convergence in the consumption of basic food products in Ukraine over the period 2000–2021, which represents an important aspect of assessing food security at the regional level. Using panel data for basic food product groups, econometric models of conditional β-convergence were constructed in three specifications.. For each product group, the most appropriate model specification was selected based on the results of the Fisher and Hausman tests. The findings confirm the existence of a convergence trend in the regional consumption of most food categories, suggesting a gradual narrowing of disparities in food access across regions. However, the speed of convergence varies considerably by product: the fastest convergence was observed in the consumption of potatoes, fruits, and milk, while the slowest was recorded for fish and vegetable oil. In addition, the estimated models highlight the significant influence of household income on the structure of food consumption. Higher incomes are associated with increased consumption of meat, fruits, vegetables, and fish, whereas the consumption of cheaper and more traditional products such as bread, potatoes, and sugar tends to decline. These patterns point to a shift in dietary behavior in favor of more balanced and healthier nutrition in wealthier regions, with a decreasing reliance on low-cost calorie sources and increasing demand for protein-rich foods. The revealed trends are of practical importance for the development of regional policies aimed at mitigating food inequality and strengthening food security in the context of socio-economic disparities. The study concludes by outlining possible directions for future research, including the incorporation of a broader range of determinants into the convergence model and an analysis of the impact of the full-scale war after 2022 on food consumption dynamics.
